By the Lake

The weather was unbelievably beautiful for being the end of October. Along with the peak color changing going on, temperatures were in the 60s and the sun was shining for the first time in days. I wish every day could be like today. Katelyn scooped me up from the office during lunch again, and we headed out by Reeds Lake, which is one of our favorite places to go when the weather is nice.

And now it's pouring outside, and is supposed to continue throughout the day. I hope this doesn't spoil Halloween for all the kiddies of west Michigan tomorrow night. I'm really looking forward to passing out candy and seeing all of the babies dressed up as animals. It's my favorite thing ever.

Hope you all have a fantastic Halloween! Can't wait to see all your costumes.

Blue Bridge Part II

It was not quite one full year ago that Katelyn and I snapped some photos on the blue bridge of GR when we were trying to start up Relatively Offbeat and give it a go. In a few short weeks we will reach our one year blogiversary. I cannot believe how quickly the year slipped away.
I feel like we've really come into our own with the blog. At first, we couldn't decide what our niche' was or would be. We knew we had a passion for traveling, food, fashion, and local events. We always thought we'd have to stick with one of those things, but we decided to cover all elements anyway. I'm glad we did.

I can't believe November is just a couple days away. Before you know it, snow will be on the ground in Michigan. The farmers almanac says it's supposed to be a long and snowy winter. I'm keeping my fingers crossed that it's a mistake, and that summer is right around the corner again.

Hey, wishful thinking. ;]

Have a good week, everyone!

South Hill

Late last week, Katelyn and I took a lunchtime drive through our old neighborhood of South Hill. It always makes me feel nostalgic to be close to the house we lived in last year. Many things have changed since then, but the memories made there are priceless. I will always love that big yellow dollhouse we once called home.

There's something about fall that makes me feel reminiscent. I often find myself reflecting on previous Octobers. Last year around this time, Katelyn were making tons of lattes, dancing in the kitchen with Syrus, and questioning if it was too soon for Christmas music.
Since we moved out of the house, Katelyn married and moved in with Alex, and I moved out to Kentwood to live alone and now I'm in Muskegon to save up for my wedding next September. This house will always hold a special place in our hearts. <3

While driving around, we stopped in a random open lot and snapped some photos. We made our best effort with my headache and the freezing cold temps.

Ghost Oreo Balls

After two tries, I successfully made adorable and scrumptious ghoul Oreo balls. It really is a super easy recipe, I just made the bad choice in not buying actual melting chocolate...so take my advice and just buy the darn chocolate meant for melting!

What you need:

1 Package of Oreo's
1 Package of Cream Cheese (3oz)
Melting chocolate

What to do:

1. Crush up the oreos-I don't have a food processor, but that would be extremely helpful rather than having to do it by hand
2. Add the cream cheese and mix together with a blender until you get a mixture like the one below that you can make little balls out of

3. Use your hands to roll into balls and place on wax paper to put in your fridge

4. While the Oreo balls are chillin' in the fridge, begin to melt your chocolate on the stove on the lowest setting possible!
5. Dip your Oreo balls in the chocolate so that it's completely covered and place back on wax paper to dry
6. Once cooled, draw the cute little eyes and mouth on your ghosts
7. Enjoy!

My pumpkin ones didn't turn out as good as I hoped, maybe next time I'll roll them in orange sprinkles too.

But these guys did turn out and oh my, how cute are they?!

What Halloween treats are you guys making this year?

Proposing to Your Bridesmaids

Here comes the first post in the long series of wedding posts to follow throughout the next 11 months. I am so excited to share wedding plans and updates over the next year with you all. It's going to be a wild ride!

As some of you already know, I hit the ground running when Steve proposed. Due to him being a Canadian, we have our work cut out for us with legal matters, visas, green cards, etc. I wanted to make sure all my ducks were in a row so that we could get down to business with the important things.

First things first: bridesmaids.

Although I knew who I wanted to stand by my side on my wedding day, I didn't instantly know how I would ask them. I wanted to do it in a creative and fun way, so I thought of some cute little things I could put into different shaped boxes for all the girls to open.

Each box included mints, chocolates, mini bottles of wine, suckers, dye cuts, and mini card tags that read "I'll say 'I do', will you too?"

I'm so excited and honored to have eight very important women in my life stand up next to me on my special day. <3

October Rain

The forecast this entire week: rain, rain, and more rain.
We met up for our weekly lunch yesterday so that we could grab some hot soup to wash away our rainy blues. To our dismay, every soup shop we tried to visit was packed full of guests who had the same idea as us. We settled on eating chili in the car while listening to the rain fall by Reeds Lake.
