Recipe: Maple Whipped Sweet Potatoes

This year for Thanksgiving, I tried a new potato recipe. I'm usually your standard mashed potatoes and gravy kind of girl, but I felt like experimenting with sweet potatoes for something unique. Although sweet potatoes have never been a favorite, I have a lot of family members that are big fans. And, I must say, this year I was too.



Maple Whipped Sweet Potatoes

Ingredients:
3 pounds sweet potatoes
2 tablespoons maple syrup
1/2 cup of half and half
2 tablespoons butter or margarine
1/2 teaspoon salt
pinch of nutmeg
pinch of cinnamon
additional maple syrup, if desired

 Directions:
Pre-heat oven to 350 degrees. 

Boil sweet potatoes in water for approximately 15 minutes, or until you can poke a fork into them easily. Drain and let cool. Slip off potato skins and beat potatoes with electric mixer until no lumps remain. Add half and half, maple syrup, butter, salt, and desired amount of nutmeg and cinnamon. Continue mixing until mixture is fluffy. Drizzle additional desired syrup on top of potatoes for presentation and added flavor!
