Jack Daniels BBQs

Happy Tuesday, ya'll! Today I'm going to share a quick and easy recipe for Jack Daniel's Pulled Pork BBQ's.
Since I've been on a cooking kick and eliminating anything that comes out of a box, the crock pot has been my saving grace.

All you need:
  • Crockpot
  • Pork Loin 
  • Brown Sugar (1/2 cup)
  • Balsamic Vinegar (3 tablespoons)
  • Jack Daniels BBQ Sauce
  • Jack Daniels Whiskey (optional)
  • Hamburger Buns (optional)
Total cook time: 8 hours

Before throwing the pork loin into the crockpot, feel free to trim any excess fat off. (Remember that leaving some will add extra flavor and leave the pulled pork a little more juicy when finished).  Also, give it a nice rinse.  Make sure the crockpot is on low heat.

Once in the crockpot, take your cup of brown sugar and slowly pour it over the pork.  Roll it around and make sure it's evenly coated.


When finished coating the loin, pour 3 tablespoons of balsamic vinegar over it.

  Then, pour as much BBQ sauce as you'd like.  This is going to depend on the size of your roast.
 For extra added fun, feel free to add a shot or two of Jack Daniels directly to the slow cooker. ;]

After 8 hours of cooking, take a fork to the roast and start pulling it apart.  It should fall apart easily after being in the slow cooker all day.

Then, add more BBQ sauce until it's at the consistency you prefer.

Now it's ready!  Feel free to throw it onto a hamburger bun, or eat it sans bread!

Bread Making + Face Masks

Katelyn here!
So I went home to Muskegon yesterday, and this morning I helped my stepdad make some bread! Here's a little insight to how it went. For those of you who don't know me too well...I wouldn't exactly say I'm the baking/cooking type. So first Wayne showed me how to make the bread (and I took photos), and then he let me make the bread! Here are some photos from today:










It is the most delicious bread EVER! Pictures really don't do it justice...you need to smell it and taste it to fully appreciate it. 

Then I came back to Grand Rapids and Laura and I decided to finally try the face masks we bought at Forever21. Well...I will let you decide how they went. 
WARNING! The images you are about to see are extremely disturbing. We truly are masters at being awkward.

Laura's Sweetheart Pies

I've been doing some experimenting with cooking & baking lately because I've set some new goals for myself.  I am cutting out processed foods, so anything that comes in a box is prohibited in the Bachelorette Pad.
I also cut out red meat (and Starbucks, but that's a different story).  This is actually incredibly easy for me since I was a vegetarian last year and just started eating meat again this past autumn.

So the other day I made my roommates and I some turkey chili and strawberry-raspberry pies.




And no dinner is complete without one of Katelyn's incredible lattes.



The pies turned out better than I could have imagined.  I've been buying an excessive amount of fresh produce lately, but have such a hard time eating it all before it goes bad.  I took all of my strawberries and raspberries out of the fridge and threw them into some pie crust with ricotta and sugar, and VOILA! Pies!

I decided to make them extra feminine and cute by using my heart-shaped cookie cutter.  ;)







The recipe is super simple and they turned out to be delicious! They are also great for on the go.

Love is a Verb

I had a Valentine this year.



Last  year on February 14th, I spent the day at work, picked up some Sushi on my commute back home, picked up a bottle of red, plopped my butt on the floor and enjoyed my fancy dinner for 1 while watching the Red Wings.  But don't get me wrong, I didn't complain.  That's just how you roll when you're single.

But this year was different.

I still worked all day.  But instead of takeout and hockey, Steven had dinner cooked and ready for me when I walked in the door.
(The hockey comes later.. I got us Red Wings vs. Predators tickets for next weekend.)

Came home to this. :)


Syrus wanted some.



 Dinner was delicious.  But now that I know he can cook, he has no idea what he's in for.
;]

I followed up by making him some V-day desserts.  Cupcakes and chocolate covered strawberries!







 The evening was absolutely perfect.  It was so nice to have a Valentine this year.  I forgot how nice it can be to share days like this with someone special.
And I don't just mean Steven.  Syrus was just as much my Valentine this year. :)
