Mia's Delicious Mostaccioli Recipe

In an effort to be the most amazing wife ever, I have decided that being able to cook even a few good dishes is one of my first goals. One of my co-workers at The Spa, Mia, gave me this easy recipe to try out on my own and it was too good to be true! So I figured I just had to share this with the rest of the world too :) Sorry for the lack of photos, with my track record for cooking I thought it would be wiser to just try it out first with no documentation, hah.

What you'll need:

-1 Pack of Chicken Sausage--Chipotle & Pepper Jack flavored
-3 Bell Peppers--I bought a red, orange, and yellow for color purposes
-1/2 Onion
-2 Garlic Cloves
-1 Box of Mostaccioli Pasta
-1 Jar of Tomato Sauce--Mia prefers homemade sauce or a flavored sauce, I opted for an organic tomato basil sauce
-Garlic powder or Basil or any seasonings of your liking really

Okay so here's what you do:

1. Chop up 1/2 of each of the bell peppers and 1/2 of the onion (I only chopped up 1/4 onion because Alex and I aren't big onion people)
2. In a frying pan, add some olive oil and all your chopped vegetables and cook for about 10 minutes
3. Cut up the chicken sausage and add these to the frying pan as well (these are already cooked, so don't worry about having to cook them through)
4. In a separate pot boil water and then add 3 cups of mostaccioli pasta and cook for 10 minutes or until done
5. Add everything together into one big pot with the seasonings of your choice, sauce, and noodles
6. Top it off with a little cheese


Side note, this is actually paella and not the recipe you just read. Also, I just realized that about 1/2 of my photos include coffee or food...not mad.

Jack Daniels BBQs

Happy Tuesday, ya'll! Today I'm going to share a quick and easy recipe for Jack Daniel's Pulled Pork BBQ's.
Since I've been on a cooking kick and eliminating anything that comes out of a box, the crock pot has been my saving grace.

All you need:
  • Crockpot
  • Pork Loin 
  • Brown Sugar (1/2 cup)
  • Balsamic Vinegar (3 tablespoons)
  • Jack Daniels BBQ Sauce
  • Jack Daniels Whiskey (optional)
  • Hamburger Buns (optional)
Total cook time: 8 hours

Before throwing the pork loin into the crockpot, feel free to trim any excess fat off. (Remember that leaving some will add extra flavor and leave the pulled pork a little more juicy when finished).  Also, give it a nice rinse.  Make sure the crockpot is on low heat.

Once in the crockpot, take your cup of brown sugar and slowly pour it over the pork.  Roll it around and make sure it's evenly coated.


When finished coating the loin, pour 3 tablespoons of balsamic vinegar over it.

  Then, pour as much BBQ sauce as you'd like.  This is going to depend on the size of your roast.
 For extra added fun, feel free to add a shot or two of Jack Daniels directly to the slow cooker. ;]

After 8 hours of cooking, take a fork to the roast and start pulling it apart.  It should fall apart easily after being in the slow cooker all day.

Then, add more BBQ sauce until it's at the consistency you prefer.

Now it's ready!  Feel free to throw it onto a hamburger bun, or eat it sans bread!

Wining and Dining at the JW Marriott

It has been quite an eventful week over here in the Relatively Offbeat household!

On Monday I (Katelyn) went to a wine dinner with Alex at six.one.six. The featured wine maker was Mas De Daumas, and they paired SEVEN different wines with four courses and a light dessert to finish. It was so much fun and I love seeing Alex so much in his element. Here are a couple photos of the food and us at the wine dinner!

Thursday night Laura and I took a short little road trip to our hometown in Muskegon to drop off Syrus for the weekend and she worked on her friend's invites while I pinterested.

This Vine clip shows only a portion of how obnoxious we really are.


 

We are hoping to make up for our lack of posts as soon as possible.
